"二訪RAW這次是享用the One & Only夏季菜單,其實訂位時就有被朋友提醒這次會是以日常食材來料理,就是沒有高檔食材,但價格很高檔。整餐吃下來我才明白這個意思。 如果把它當成一場show來看,還是會覺得很驚喜精彩。但與此同時我的味覺沒有同步感受到太多驚喜,至少在Algae 海藻、Squash 瓜、Shrimp 蝦、Shellfish 甲殼、Tomato 番茄這幾道菜色上,可能我味覺比較鈍,我只有吃到食材本身的味道、很熟悉的味道,沒有品嚐到主廚想表現食材新生命的部分。不過這次搭配的wine pairing,確實豐富了料理的味道與滿意度。 最後是服務⋯一開始倒酒倒出杯外流到桌上,結帳時送別桌的帳單給我們,還是刷卡以後服務人員才發現錯誤⋯到一般的餐廳用餐也不應該有的情形,發生在米其林二星的餐廳..." "餐點在水準之上,但好不好吃見人見智,個人覺得服務比餐點更令人深刻,環境如其他人評論一樣有點吵雜,但最需要改進的地方就是廁所整潔,因男女共用的關係,導致有點髒亂,這點比較扣分。 還好主廚André 笑咪咪待人親切,所以還是給予5星評價!"

"非常失望的米其林2星名店RAW餐廳。 可以看到滿滿人性的賺錢流程「套路」,卻沒感受到美食的本質和意義。 吃完後,我真的很不欣賞這位所謂名廚開的店,跟他說的話。 我很想問你,你是為客戶做料理?還是你在為自己做料理? 收費跟餐飲服務的失衡,用的食材沒有表裡一致,舉例:用魔鬼魚取代鱈魚,說要鼓勵民眾多吃魔鬼魚,但魔鬼魚的的味道還是壓不住,又如何自圓其說的是為漁民創造銷售需求呢?感覺就是一個為自己降低成本賺錢的好聽故事套路。 另外難訂、超貴、酒水也超貴,都沒問題哪個名店不受人愛戴呢?但實際到現場享用餐飲時,確沒有感受到當初這難訂所得到的價值回報!!感覺自己像個傻子。 因為: 1、食材雖然有達到鮮甜,但這頓餐飲好像在吃調味醬料饗宴 2、環境氣氛很吵像菜市場,讓人無法好好品味和專注味覺饗宴 3..." "I had summer menu 2023 and I impressed with the concept and the creativity a lot - to use a single ingredient and 5 different cooking methods for a dish, like using different kinds of algae / shellfish / tomato etc. one of my friends doesn’t like the mayonnaise from the artichoke dish but I enjoyed it.
